Shredded Pork Barbacoa

Shredded Pork Barbacoa – Cristine Rolfson

Put 1 pork roast in a crock pot with a very little water and cook until very tender (about 8 hours on low). Shred pork and add:

1 can red enchilada sauce

2 cloves minced garlic (I use three or four because I love garlic)

1 small can diced green chilies

1 can Coke (not diet coke)

1 cup brown sugar (not packed)
salt to taste


Cook for one more hour.
